It’s Just as Easy as Bacon Pie

Impossibly Easy Bacon Pie
Active Work Time: 10 minutes * Total Preparation Time: 50 minutes
12 slices bacon, diced
1 cup grated Swiss cheese
1/3 cup chopped onion
1/2 cup buttermilk baking mix
1 cup milk
1/8 teaspoon pepper
2 eggs
Heat the oven to 400 degrees. Grease a 9-inch pie plate.
Cook the bacon in a medium skillet over medium heat until cooked through and crispy, stirring often, about 10 minutes. Drain on paper towels.
Sprinkle the bacon, cheese and onion in the pie plate. In a bowl, whisk together the baking mix, milk, pepper and eggs. Pour into the pie plate.
Bake the pie until a knife inserted in the center comes out clean, 35 to 40 minutes. Cool for 5 minutes before cutting into wedges.
8 servings. Each serving: 214 calories; 390 mg sodium; 83 mg cholesterol; 15 grams fat; 7 grams saturated fat; 7 grams carbohydrates; 12 grams protein; 0.28 gram fiber.
